I got this great little package with my Swerve Sweetener and a handy set of measuring spoons, which I really needed! Since the fire, I haven't replaced all my kitchen items, pretty much just those things I use on a daily basis. I usually just buy it as I need it, and since I haven't done a lot of baking since, I haven't needed them. I also don't have a lot of products that you typically need for baking like vanilla, baking powder or even cinnamon so when I got my Swerve and I wanted to bake with it, without an extra trip to the store, I decided to work with what I have. We found a super simple sugar cookie recipe that called for 1 cup of sugar, 1 cup of butter, 2 cups of flour and egg and salt. Since you can use Swerve cup for cup as a sugar replacement, we decided to give it a try.

When I say we had to get creative, I really mean it! Once we got started making the cookies, we realized we didn't have quite enough flour to make 3 cups, so we used 2 cups of flour and 1 cup of baking mix, you know like Bisquick. Yes, we are a hot mess in the kitchen, but I have to say overall they were good biscuit cookies! lol They tasted a little like a sweet biscuit and would have been wonderful with some frosting on top, but again, nothing to make frosting with, so we topped some of them with chocolate chips.
The main thing is you can not tell that we didn't use sugar and my kids ate them up! So I now have the satisfaction of knowing I can make sugar cookies that are yummy and sweet and healthier too!
